Blueberry Protein Pancakes

  • Two Servings
  • Ingredients:
  • 1 scoop of whey or soy protein powder
  • 3 tablespoon of almond flour
  • 1 teaspoon cinnamon
  • ½ teaspoon baking soda
  • 2 tablespoons Splenda
  • ¾ cup egg whites
  • 1 tablespoon unsweetened apple sauce
  • 1 teaspoon vanilla extract
  • ¼ cup blueberries
  • Directions:
  • 1. Mix together all dry ingredients
  • 2. In separate bowl mix together all wet ingredients (except blueberries)
  • 3. Slowly combine wet mix into dry mix and stir until there are no longer any clumps
  • 4. Gently stir in blueberries
  • 5. Pour batter to desired pancake size on medium heat skillet, cooking 2-3 minutes per side (cook time can depend on your stovetop)
  • Enjoy your flavorful pancakes. For an even healthier breakfast, try topping each pancake with greek yogurt instead of maple syrup.
